The 2018 Gingerbread Carousel was assembled and running at Disney’s Beach Resort by mid-November this year.

It really is amazing!

We got to see the pastry chefs assemble the Disney’s Beach Resort Gingerbread Carousel a few years ago and it was amazing!

The carousel’s colors change slightly every year.

9am:  They trimmed and set the tiles so fast!  They’ve already been working for 5 hours on this!

They started at 4am (!!!) and got it all done in one day….it was up and totally decorated – and running – by 8pm!

8pm:  Disney’s Beach Resort Gingerbread Carousel is up and running!  WOW!!  That’s a 16-hour work day for all the pastry chefs!

We got the 2015 LE gingerbread pin!

This holiday season, look for a life-size, fully rotating gingerbread carousel display in the Beach Club’s lobby. There are seven Hidden Mickeys (look on the horse’s rumps!).

It took 36 lbs. of honey, 96 lbs. of bread flour, 100 pints of eggs, 10 lbs. of spices, 10 quarts of simple syrup, 100 lbs. of icing, 50 lbs. of dark chocolate, 10 quarts of egg whites, and 100 lbs. of confectioner sugar to make the carousel!

Take home sweet gingerbread treats, including small gingerbread kits, from the Beach Club Marketplace. Opening date/pin release day: November 19, 2015.

This is not Caroline’s first time in the Disney College Program. Along with her sister, she was previously accepted into the program a few years earlier.  Back in Colorado, Caroline was wishing for a little more pixie dust to brighten up her life.  On a whim, she decides to apply to the exclusive Disney Alumni Summer Program.

Now that she’s back, things get wild.

Caroline tells all – from the ins and outs of Disney’s secret training class called Traditions; to learning how to be a happy cast member during on-the-job training; to what it’s like to interact with fellow cast members and the guests who are ready to explore the most magical place on earth.

2018 Gingerbread Display at Disney’s Contemporary Resort

The Gingerbread Display at Disney’s Contemporary Resort. Open 10am-10pm daily.  The castle is outlined in bright LED white lights this year.  Look for the 17 Hidden Mickeys!

This year’s gingerbread display at Disney’s Contemporary Resort again features Cinderella and Prince Charming in front of their gingerbread castle.

The Fairy Godmother was added this year, along with a fabulous glass slipper on a blue velvet pillow.

The adorable gingerbread version of Cinderella Castle is done in “it’s a small world” style inspired by the artwork of Mary Blair.

You can find it by the large A-frame window in the main atrium.

The Grand Floridian Gingerbread House is celebrating its 18th year!

The Gingerbread Sweet Shop

They put up the 2016 Grand Floridian Gingerbread House this week. It’s so beautiful! There are Hidden Mickey’s in the shingles.  The whole lobby of the GF smells like gingerbread! ❤

Free samples of the gingerbread for all the guests.  So delicious!  The botton is coated in rich dark chocolate!

The chefs make extra gingerbread shingles and dip them in dark chocolate. You can buy them in the gift shop and also from the gingerbread house when it’s open (limited hours).

Some of the details:

The Gingerbread House stands 16 feet tall.

The 2015 ingredients include 1,050 pounds of honey, 600 pounds of powdered sugar, 800 pounds of flour, 140 pints of egg whites, and 700 lbs. of delicious Belgium chocolate!

Here’s a video of the final dusting by Executive Pastry Chef Erich Herbitschek:  Putting the Final Touches on the Gingerbread House  

The dusting of the gingerbread house takes 10-15 minutes. The chef squirts down the gingerbread roof with a ‘simple sugar’ water mix, and then sifts powdered sugar onto the house.

Then in early January when they take it all down, they take off all the gingerbread and compost it, wash down the house and store it again until next Christmas!
